Cauliflower Cheese with a Parmesan and Breadcrumb Crust

- •2 tablespoons Buttermelted
- •2 tablespoons Flour
- •2 cups Milk
- •100 grams Cheddar cheesehalf mature or strong, grated
- •100 grams Red Leicester cheesegrated
- •1/2 teaspoon Salt(optional)to taste
- •100 grams Breadcrumbsmade from fresh white bread
- •Parmesan cheese(optional)finely grated

Preheat the oven to 180°C (355°F).

Cut the cauliflower into florets and place them in a pan. Cover with water and add 1/2 teaspoon of salt.

Bring to a low boil, cover, and cook for 10 minutes.

Melt butter in a saucepan over medium heat. Add flour and stir for about 1 minute.

Gradually add milk in three stages, whisking to remove lumps. Simmer until thickened.

Add grated cheddar and red Leicester cheese to the sauce. Stir until melted. Season with salt if needed.

Drain the cauliflower and place it in a baking dish.

Pour the cheese sauce over the cauliflower.

Sprinkle breadcrumbs and grated Parmesan over the top.
