- •1 Chorizosliced
- •3 Shallotsdiced
- •3 Garlic clovesminced
- •2 dessert spoons Plain flour
- •2 dessert spoons Unsalted butter
- •600 ml Milkcold
- •175 g Cheddar cheesegrated
- •White pepper(optional)to taste
- •1 teaspoon Mustard(optional)heaped, preferably Coleman's
- •Salt and vinegar crisps(optional)crushed, for topping

Prepare the cauliflower by removing leaves and core, then cut into florets.

Wash the cauliflower florets and leaves thoroughly.

Slice the chorizo and dice the shallots and garlic.

Parboil the cauliflower florets for about 3 minutes.

Render the chorizo in a pan to release its oil.

Add shallots and cauliflower leaves to the pan and sauté until soft.

Add garlic and sauté for 30 seconds.

Make a roux with flour and butter, then gradually add milk to form a sauce.

Add grated cheese, white pepper, and mustard to the sauce.

Combine the sauce with the chorizo, vegetables, and cauliflower.
