  • 150 grams Caster sugar
  • 2 Star anise
  • 4 Cardamom podsLightly crushed
  • Cranberries
  • 2 ApplesCored, peeled, and thinly sliced
  • SaltTo taste
  • Black pepperTo taste
  • PortFor deglazing
  • Orange zest
  • Orange juice
