Caprese Pasta

- •1 clove Garliclightly crushed
- •4-5 leaves Basil leaveslightly crushed
- •1 tablespoon Extra virgin olive oilper person

- •1/2 pound Mozzarellafior di latte or buffalo, diced
- •Rigatoni pastaor any preferred pasta
- •Parmigiano-Reggiano cheesegrated

Peel and chop the tomatoes, removing seeds and water.

Add salt to tomatoes and let sit for 10 minutes to extract more water.

Blend tomatoes to preferred texture.

Add crushed garlic, basil, olive oil, and black pepper to the tomato mixture. Let rest for 15 minutes.

Dice mozzarella and set aside.

Cook pasta according to package instructions until al dente.

Remove garlic from tomato mixture and add grated Parmigiano-Reggiano.
