Ingredients
  • 1/2 medium Yellow oniondiced
  • 1 cup Long grain ricerinsed
  • 2 tablespoons Olive oilsmooth
  • 1 1/2 cups Water
  • 1 teaspoon Kosher salt
  • 3 Garlic clovesminced
  • 3 cups Cooked black beanswith liquid
  • 1 cup Sour cream
  • 1/4 cup Mayonnaise
  • 2 Chipotles in adobo sauce
  • 1/2 lime Lime juiceabout 1 tablespoon
  • 1 pound Ground beef
  • 2 teaspoons Ancho chili powder
  • 2 teaspoons Smoked paprika
  • 2 teaspoons Onion powder
  • 2 teaspoons Garlic powder
  • 1/2 teaspoon Ground cumin
  • 1 cup Low sodium beef broth
  • 1/2 cup Cilantrofinely chopped
  • 1 extra large Flour tortillas
  • Oaxaca cheese(optional)shredded
  • Iceberg lettuce(optional)shredded

    Dice half of a medium yellow onion.

    Rinse 1 cup of long grain rice until the water runs clear.

    Heat 2 tablespoons of olive oil in a medium pot over medium-high heat.

    Add the rice and diced onion to the pot and sauté for 3 minutes.

    Add 1.5 cups of water and 1 teaspoon of kosher salt. Bring to a boil, then reduce to a simmer and cover.

    Dice another half of a medium yellow onion and mince 3 garlic cloves.

    In a large pan, heat 3 tablespoons of olive oil over medium heat. Add the onions and sauté until golden brown.

    Add the minced garlic and sauté for 2 minutes.

    Add 3 cups of cooked black beans with some liquid and cook until thickened.

    Make chipotle sauce by blending 1 cup sour cream, 1/4 cup mayo, 2 chipotles in adobo, 1 garlic clove, 1 teaspoon kosher salt, and juice of half a lime until smooth.

    In a large pan, heat 2 tablespoons of olive oil over medium-high heat. Add 1 pound of ground beef and brown.

    Season beef with 2 teaspoons each of ancho chili powder, smoked paprika, onion powder, garlic powder, 1/2 teaspoon ground cumin, and 1 teaspoon kosher salt. Mix well.

    Add 1 cup of low sodium beef broth and cook until reduced.

    Fluff the rice and add juice of 1 lime and 1/2 cup chopped cilantro. Stir to combine.

    Assemble burrito with rice, beans, beef, pico de gallo, cheese, lettuce, and chipotle sauce in a large flour tortilla. Roll tightly.
