Bubble & Squeak with Sausages and Onion Gravy

Cook root vegetables for 15-20 minutes and drain.

Heat olive oil and butter in a pan until foaming.

Add chestnuts and cooked vegetables to the pan. Mash with a potato masher.

Unravel sausages and drizzle with olive oil. Sprinkle rosemary over them.

Place sausages in a preheated oven at 220°C (430°F) until golden, turning every 5 minutes.

Prepare onion gravy by caramelizing onions, adding flour, balsamic vinegar, and stock. Boil until thickened.
