British Chili Con Carne
A British twist on the classic chili con carne, featuring minced beef and dark chocolate for depth of flavor.

- •Olive oil
- •1 Red pepperLarge
- •1 Chili pepperBig, fat
- •1.5 OnionsMedium-sized
- •2 Garlic clovesFat cloves
- •2 tbsp Tomato puree

- •1 tsp Dried oregano
- •1.5 tsp Smoked paprika
- •Chopped tomatoes
- •Beef stock
- •Kidney beans
- •2 squares Dark chocolate

Brown the minced beef in a pan with olive oil over medium-high heat until golden brown, about 10 minutes.

Remove the beef from the pan and set aside. Do not wash the pan.

Add more olive oil to the same pan and sweat the diced red pepper, chili pepper, onions, and garlic for about 5 minutes until the onions are soft.

Add tomato puree, ground cumin, dried oregano, and smoked paprika to the vegetables. Cook for 2 minutes to remove bitterness from the tomato puree.

Return the browned beef to the pan, add chopped tomatoes and beef stock. Simmer for 45 minutes to 1 hour until thick and glossy.

Add kidney beans and dark chocolate. Stir and cook for an additional 5 minutes.

Season with salt and pepper to taste before serving.
