Ingredients
  • 2 cups Self-raising flour
  • 1 teaspoon Baking powderAdd 2 extra teaspoons if using plain flour
  • 1/4 teaspoon Salt
  • 1/2 cup ButterRoom temperature
  • 3/4 cup Caster sugar
  • 1 EggBeaten
  • 1 teaspoon Vanilla extract
  • 1/2 cup Milk
  • 1 cup BlueberriesFresh

    Preheat oven to 180°C (355°F).

    Line a 12-cup muffin tin with paper cases.

    In a large bowl, add self-raising flour. If using plain flour, add 3 teaspoons of baking powder.

    Sieve in baking powder and add salt. Mix well.

    Add butter and rub into flour mixture until it resembles breadcrumbs.

    Add caster sugar and mix.

    Add beaten egg, vanilla extract, and milk. Mix until combined.

    Add a teaspoon of batter to each muffin cup, add 3-4 blueberries, then more batter, and repeat until full.

    Bake for 25 minutes. Check with a toothpick; if it comes out clean, muffins are done.

    Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
