Basque Country Chicken (Poulet Basquaise)

Prepare the chicken stock using chicken wings, carrot, onion, bouquet garni, and tomato paste. Brown the chicken wings in peanut oil, add vegetables, and simmer with stock for 30 minutes.

Dice the prosciutto ham and blanch in boiling water. Drain and set aside.

In a pan, heat olive oil and sauté the prosciutto on low heat. Add onions, garlic, and bell peppers, cooking until soft.

Add canned tomatoes and bouquet garni to the pan. Simmer on low heat until liquid reduces.

Preheat oven to 360°F (200°C). Season chicken thighs with salt and pepper, and brown in a cast-iron pan. Transfer to the oven and cook for 10 minutes.

Remove chicken from oven. In the same pan, deglaze with white wine and reduce. Add chicken stock and reduce to a napping consistency.

Combine reduced sauce with vegetable mixture. Add chicken pieces and simmer for 5 minutes.
