  • PotatoesSoup potatoes, cut into cubes
  • Green beansCut into bite-size pieces
  • 1 clove GarlicMade into a paste
  • 2 pinches Coarse salt
  • Pine nutsSome added with basil
  • handfuls BasilFresh
  • Olive oilCold press extra virgin
  • Parmigiano Reggiano
  • PecorinoPecorino Sardo preferred
  • Trofie pastaOr other short pasta

    Cut potatoes into cubes and green beans into bite-size pieces.

    Boil potatoes for about 10 minutes until almost tender.

    Add green beans and cook for about 5 more minutes.

    Transfer potatoes and green beans to an ice bath to blanch.

    Make a garlic paste with garlic and coarse salt using a mortar and pestle.

    Add most of the pine nuts and grind into a paste.

    Add basil and remaining pine nuts, grind into a paste.

    Add olive oil and mix until consistency is smooth.
