Heat oil in a pressure cooker.

Add bay leaves, cloves, green cardamom, black cardamom, cinnamon, and black peppercorns. Sauté until fragrant.

Add finely chopped onions and sauté until golden brown.

Add ginger and garlic paste. Sauté until raw aroma disappears.

Add coriander powder, red chili powder, and turmeric powder. Mix well.

Add mutton pieces and salt. Sauté on high heat to sear the mutton.
