Ingredients
  • Mutton on the bone
  • Potatoes
  • Tomatoes
  • OnionsFinely chopped
  • Ginger paste
  • Coriander powder
  • Red chili powderKashmir red chili powder for color
  • Garlic paste
  • Garam masala powderAdded towards the end
  • Turmeric powder
  • 2 Bay leaves
  • Chopped coriander leavesFor garnish
  • Whole black peppercorns
  • 1 inch Cinnamon
  • 1 Black cardamom
  • Green cardamom
  • Cloves
  • Salt
  • Oil

    Heat oil in a pressure cooker.

    Add bay leaves, cloves, green cardamom, black cardamom, cinnamon, and black peppercorns. Sauté until fragrant.

    Add finely chopped onions and sauté until golden brown.

    Add ginger and garlic paste. Sauté until raw aroma disappears.

    Add coriander powder, red chili powder, and turmeric powder. Mix well.

    Add mutton pieces and salt. Sauté on high heat to sear the mutton.

    Add chopped coriander leaves and potatoes. Mix well.

    Add tomatoes and a little more salt. Sauté until tomatoes soften.

    Add water, cover the pressure cooker, and cook for 6 whistles on medium heat.

    Let the pressure release naturally. Open the cooker, add garam masala powder, and mix well.
