- •Walnutsbroken into smaller pieces
- •1 teaspoon Demerara sugar(optional)for sprinkling on top

Preheat the oven to 150°C (300°F).

Grease and flour a 900g (2 lb) loaf tin.

Mash 3 medium-sized ripe bananas in a bowl.

Add 1 teaspoon of vanilla extract, 115g of softened butter, and 2 large beaten eggs to the bananas.

In another bowl, mix 230g of plain flour, 1 teaspoon of baking powder, 1/4 teaspoon of bicarbonate of soda, 1/4 teaspoon of salt, 150g of granulated sugar, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of ground nutmeg.

Combine the dry ingredients with the wet ingredients and mix until smooth.

Fold in the walnuts.

Pour the mixture into the prepared loaf tin and sprinkle with 1 teaspoon of Demerara sugar.

Bake in the preheated oven for 1 hour.

Test with a skewer; if it comes out clean, the bread is done. If not, bake for an additional 5 minutes.

Let the bread cool for 10 minutes before removing from the tin.
