  • 2 Bananaslarge, ripe
  • Butterroom temperature
  • Sugarroom temperature
  • Eggs
  • Vanilla extract
  • Self-raising flourcontains baking powder
  • Cinnamon
  • Salt(optional)omit if using salted butter
  • Nutmegfreshly grated
  • Walnuts(optional)roughly chopped
  • Sugar(optional)coarse, for topping

    Mash two large ripe bananas on a plate and set aside.

    Cream butter and sugar in a mixing bowl until light and creamy.

    Add mashed bananas, eggs, and vanilla extract. Whisk for 2 minutes.

    Mix dry ingredients: self-raising flour, cinnamon, salt (if using), and nutmeg.

    Sift dry ingredients into the wet mixture and fold gently.

    Fold in roughly chopped walnuts.

    Preheat air fryer to 160°C (320°F) for 3 minutes.

    Pour batter into a greased loaf tin, tap to remove air bubbles, and sprinkle coarse sugar on top.
