Preheat the oven to 170°C (340°F). Grease and line a 900g (2 lb) loaf tin.

Mash the ripe bananas with a fork until smooth.

In a large bowl, cream together the sugar and softened butter until smooth and lighter in color.

Add the mashed bananas, eggs, and vanilla extract to the bowl and whisk until smooth.

Sift the self-raising flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg into the wet ingredients.

Gently fold the dry ingredients into the wet mixture using a spatula. Do not overmix.

Fold in the chopped walnuts.

Pour the batter into the prepared loaf tin and smooth the top. Optionally, sprinkle with sugar and grate more nutmeg over the top.

Bake in the preheated oven for 1 hour. Check with a skewer; if it comes out clean, the bread is done.

Allow the banana bread to cool in the tin for at least 10 minutes before transferring to a wire rack.
