Bacon and Egg Fried Rice

Preheat a wok over high heat.

Add 2 tablespoons of oil to the wok.

Add the beaten eggs and cook until lightly puffy. Remove and set aside.

Add bacon to the wok and cook until lightly crisp. Remove and set aside.

Add onions to the wok and cook until softened. Remove and set aside.

Add a bit more oil if needed, then add the rice to the wok.

Cook rice until it starts to get a pale golden color.

Add scallions and toss until fragrant.

Return eggs, bacon, and onions to the wok. Break up the eggs.
