Avocado Corn Salad with Easy Lime Dressing

- •1 pound Cherry tomatoeshalved (or use grape tomatoes or chopped Roma)
- •3 cobs Corn on the cobcooked (grilled, boiled, or baked); kernels cut off
- •2 Avocadosripe but firm; peeled, pitted, sliced
- •1/2 medium Red onionthinly sliced
- •1/2 small bunch Cilantrofresh; chopped
- •2 Garlic clovespressed
- •2 to 3 tablespoons Lime juicefresh; to taste
- •2 tablespoons Olive oilextra virgin
- •1 teaspoon Sea salt

Halve the cherry tomatoes and place them in a large salad bowl.

Cut the kernels off the cooked corn cobs, lightly crumble the kernels with your hands, and add to the bowl.

Peel, pit, and slice the avocados; add to the bowl.

Peel and thinly slice half of a medium red onion; add to the bowl.

Chop the cilantro and add to the bowl.

Add 2 to 3 tablespoons fresh lime juice, 2 tablespoons olive oil, 1 teaspoon sea salt, and a pinch of black pepper. Toss to combine and adjust lime juice to taste.
