Ingredients
  • 2 ScallopsScored
  • 1 SquidPeeled and gutted, scored
  • 2 tablespoons Olive oil
  • Rosemary(optional)Optional, for flavoring oil
  • Oregano(optional)Optional, for flavoring oil
  • Salt
  • Black pepper
  • 1 Sea bassSkin side down
  • 1 Red mullet
  • AsparagusWashed
  • Fennel(optional)Optional, for garnish
  • Thyme(optional)Optional, for garnish
  • Chilli(optional)Sliced
  • Lemon juiceFor dressing

    Score the scallops and squid for better cooking and flavor absorption.

    Heat olive oil in a pan and optionally add rosemary or oregano to flavor the oil.

    Season with salt and pepper.

    Place sea bass skin side down in the pan, followed by red mullet.

    Add scallops and squid scored side down.

    Add washed asparagus to the pan and toss in the oil.

    Turn the fish gently to cook evenly.

    Add fennel, thyme, and sliced chilli to the pan.

    Squeeze lemon juice over the dish and shake the pan to mix flavors.

    Plate the dish with asparagus, fish, and squid, and pour the pan juices over.
