    Prepare rice with broth and saffron, then mix with butter and cool on parchment paper.

    Make ragu with ground beef, pancetta, onions, carrots, celery, wine, tomato puree, and peas. Let it cool.

    Cut Tuma cheese into small cubes.

    Make a dense batter with eggs, flour, and water. Coat arancini with batter and breadcrumbs.
