Apple Pork and Leek Sausage Rolls

- •English mustard(optional)for brushing
- •1 Eggbeaten, for egg wash

Dice the leek and sauté in butter until soft. Set aside to cool.

Mix pork mince with thyme, sage, diced apple, salt, pepper, and breadcrumbs.

Preheat oven to 180°C (fan) or 200°C (non-fan).

Divide puff pastry sheet into four equal pieces.

Brush pastry with mustard, add pork mixture, and fold to seal. Crimp edges with a fork.
