  • 1 Leekdiced
  • Buttera good chunk, knob
  • 500 g Pork mince
  • Fresh thymediced
  • 2 tsp Fresh sagechopped
  • 1 Applediced, skin on
  • Saltto taste
  • Black pepperto taste
  • Breadcrumbsfrom stale bread
  • 1 Puff pastry sheetpre-made
  • English mustard(optional)for brushing
  • 1 Eggbeaten, for egg wash
  • Fennel seeds(optional)for topping
  • Mustard seeds(optional)for topping
  • Poppy seeds(optional)for topping

    Dice the leek and sauté in butter until soft. Set aside to cool.

    Mix pork mince with thyme, sage, diced apple, salt, pepper, and breadcrumbs.

    Preheat oven to 180°C (fan) or 200°C (non-fan).

    Divide puff pastry sheet into four equal pieces.

    Brush pastry with mustard, add pork mixture, and fold to seal. Crimp edges with a fork.

    Score tops, brush with egg wash, and sprinkle with seeds.

    Bake for 20-25 minutes until golden brown.
