  • 3 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Kosher salt
  • 1 cup ButterRoom temperature
  • 1 1/4 cups Granulated sugar
  • 1 cup Light brown sugarPacked
  • 4 EggsLarge, room temperature
  • 3 Honeycrisp applesPeeled and grated
  • 2 teaspoons Fresh thymeChopped
  • 2 teaspoons Vanilla extract
  • 1 cup Unsalted butterFor frosting, browned
  • 1/4 cup Maple syrup
  • 5 to 6 cups Powdered sugar
  • 6 to 8 tablespoons Heavy cream
  • 1/3 cup Apple butter

    Preheat oven to 350°F (175°C). Butter and flour two 9-inch cake pans. Optionally, line with parchment paper.

    In a large bowl, sift together 3 cups of all-purpose flour, 2 teaspoons of baking powder, and 1 teaspoon of kosher salt. Whisk to combine.

    In a stand mixer, cream 1 cup of room temperature butter until creamy. Add 1 1/4 cups of granulated sugar and 1 cup of packed light brown sugar. Mix until light and fluffy.

    Add 4 large eggs one at a time, mixing well after each addition. Scrape down the bowl as needed.

    Add 2 teaspoons of vanilla extract and 2 teaspoons of freshly chopped thyme. Mix to combine.

    Alternate adding the flour mixture and 3 grated Honeycrisp apples to the batter, starting and ending with the flour. Mix gently to combine.

    Divide the batter evenly between the prepared pans. Smooth the tops and bake for 30-35 minutes, or until a skewer comes out clean.

    For the frosting, brown 1 cup of unsalted butter in a saucepan. Cool to room temperature.

    In a mixer, combine the browned butter, 1/4 cup of maple syrup, and 1 teaspoon of kosher salt. Gradually add 5 to 6 cups of powdered sugar and 6 to 8 tablespoons of heavy cream, mixing until light and fluffy.

    Assemble the cake by spreading 1 cup of frosting on the first layer, followed by 1/3 cup of apple butter. Place the second layer on top and frost the entire cake.

    Decorate with crystallized thyme if desired. Serve and enjoy.
