- •200 g Pastatoasted
- •2 cups Chicken stockhomemade
- •1 cup Mushroomsfor umami
- •1 cup Spinachchopped
- •2 tbsp Buttercold, cubed
- •1 tbsp Vinegarto taste
- •.5 cup Parmesan cheese(optional)for serving

Sauté finely chopped red onion, carrot, and celery in a pot.

Add pasta directly into the pan and toast the edges.

Add chicken stock and let it reduce, adding more stock or water as needed until pasta is just shy of al dente.

Add mushrooms, chopped spinach, cold butter cubes, and vinegar. Stir to combine.
