Make vanilla sugar by storing used vanilla pods in a container of sugar
Put scraped vanilla pods into about a cup of sugar in a container so the sugar absorbs vanilla flavor.
Make homemade vanilla extract by steeping used vanilla pods in vodka or rum
Save scraped vanilla pods and steep 5–6 pods in a small jar of low-cost vodka or rum in the refrigerator for a couple of months to make vanilla extract.
How to split and scrape a vanilla bean to remove the seeds
Cut the bean in half crosswise, split it lengthwise while keeping the tip connected, then scrape out the seeds with the back of a paring knife.
Soften dried vanilla beans by soaking in water for 10–15 minutes
If a vanilla bean is dry, soak it in water for about 10–15 minutes to soften it before splitting.
Store vanilla beans in a zip-top bag in the refrigerator to keep them pliable
Keep vanilla beans sealed in a zip-top bag (or similar) in the fridge so they stay soft and easy to work with.
